Crunchy grilled cod Frozen fish can be convenient and economic, but if using fresh fish, simply grill this lightly oiled and seasoned, for about 5 minutes before adding its topping. Serves 4 Cooking and prep time 1hr Ingredients: Cod fillets 5 slices of stale bread garlic herbs grated parmesan a little squeezed lemon crushed capers finely chopped chilli, or sliced strips of shallot. Method: 1.) Bake frozen fillets in buttered foil for 30 minutes (or according to brand packaging). 2.) Make sure any excess liquid has drained away, then place fillets in a grill-proof dish. 3.) Make a breadcrumb mix by putting four to five slices of either stale brown bread or slices of an Italian bread like ciabatta in the blender. 4.) To the breadcrumbs add fresh-ground pepper, finely chopped garlic, herbs, grated parmesan and other ingredients according to taste (such as a little squeezed lemon, crushed capers, finely chopped chilli, or sliced strips of shallot). 5.) Give this a good stir with a tablespoon of olive oil. 6.) Scatter this topping over the fish. 7.) Drizzle over a little more oil. 8.) Grill on a medium heat for about 10 minutes, without letting it burn. 9.) Serve with roasted vegatables.
